Japanese Soufflé Pancakes
Japanese pancakes are famous for being very thick, soft, and fluffy. They are often called soufflé pancakes because they are light like a soufflé. When you cut into them, they feel soft and almost like a cloud. These pancakes are usually served with powdered sugar, syrup, fruit, or whipped cream.
Modern fluffy pancakes became popular in Japan in the 2010s. Cafés wanted to create a dessert that looked beautiful on social media. The idea was inspired by French soufflés, but Japanese chefs made their own version. Soon, people were waiting in long lines to try them.
Japanese pancakes are so soft that they “jiggle” when you move the plate! Videos of jiggling pancakes became trendy.
You can find excellent soufflé pancakes in big cities like Tokyo and Osaka. One famous café is A Happy Pancake, known for its super fluffy pancakes. Another popular place is Flipper's.
Simple Japanese-Style Pancake Recipe (Small Portion)
Ingredients
2 egg yolks
2 tablespoons milk
1 tablespoon vanilla extract
½ teaspoon baking powder
4 tablespoons flour
A pinch of salt
(Note: For extra fluffiness, many recipes also use whipped egg whites. In the video, they mixed whites with heated maple syrup and a bit of lemon juice - whip until you get stiff peaks, then add it to the pancakes batter)
Instructions:
Mix the egg yolks, milk, and vanilla extract in a bowl. Add the flour, vanilla powder, and salt. Stir until smooth. Add whipped egg whites. Stir again.
Heat a pan on low heat and lightly grease it. Spoon the batter into tall, thick circles.
Cover with a lid and cook slowly for about 4–5 minutes. Carefully flip and add a bit of water. Cook the other side until golden.
Serve warm with fruit, syrup, or whipped cream.
