Mango Pancakes
Mango pancakes are a light, sweet dessert popular in southern China, especially in Hong Kong. They are very different from breakfast pancakes. These are thin, soft crêpe-style pancakes filled with fresh mango and whipped cream, then folded into a small, golden parcel.
Mango pancakes became popular in Hong Kong in the 1980s and 1990s. Because mangoes grow well in southern China, the fruit quickly became the star ingredient. Today, mango pancakes are a classic item in Cantonese dessert cafés.
You can find excellent mango pancakes in Hong Kong and in southern cities like Guangzhou. A well-known dessert chain is Hui Lau Shan, famous for its mango sweets, including mango pancakes.
Simple Mango Pancake Recipe (about 6 pancakes)
Ingredients
1 cup (240 ml) milk
1 cup (125 g) all-purpose flour
2 tablespoons sugar
3 eggs
2 tablespoons cornstarch
2 tablespoons melted butter
1–2 ripe mangoes, cut into strips
1 cup whipped cream (for filling)
Steps
In a bowl, mix the milk, eggs, sugar, and melted butter. Add the flour and cornstarch. Stir until the batter is smooth. Heat a lightly oiled pan over low heat. Pour a small amount of batter into the pan and spread it thinly. Cook for about 1 minute, then remove. Let the pancakes cool.
Place whipped cream and mango strips in the center. Fold the pancake into a small rectangle.Chill before serving for the best taste and texture.
