Lemon Crinkle Cookies



  • 350 gr all-purpose flour
  • 1⁄4 teaspoon baking powder
  • 1⁄4 teaspoon salt
  • 1⁄8 teaspoon baking soda
  • 170 gr granulated (white) sugar
  • 100 gr butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 lemon, zested and juiced
  • 80 gr powdered sugar
  • 1 teaspoon of turmeric for colouring (or a drop of any yellow food colouring you are comfortable with)

  • In a medium bowl, whisk together the flour, baking powder, salt, and baking soda. Set aside.
  • In a separate large bowl, beat the sugar and butter until it’s soft and creamy (about 2 minutes). Use a stand mixer or a handheld mixer.
  • Add the egg, extract, lemon juice, and lemon zest to the butter mixture. If you’re using food coloring, now is the time to add it. Give it a good mix, beat again until everything is fully combined.
  • Add the flour mixture and gently stir with a spatula or wooden spoon until just combined. There should be no streaks of flour, and the dough should be sticky.
  • Cover the bowl and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to180°C.
  • Line a baking tray with parchment paper or a silicone baking mat.
  • Remove the dough from the refrigerator and scoop it (use a spoon, or create a small ball with your hands) into silicone mat. Then, gently flatten each cookie ball with a glass.
  • Place each cookie in the powered sugar toss until completely coated. Place them on the prepared baking tray.
  • Bake in the preheated oven for 12-15 minutes.
  • Let them cool on the tray for about 5 minutes. Then, transfer them to a wire rack to finish cooling.
