Cinnamon rolls



Dough :
  • (330g) warm milk (whole milk)
  • 7 gr quick rise (dry)or active yeast (1 package yeast)*
  • 80g granulated sugar
  • 2 egg yolks
  • 50g butter, melted
  • 520 gr bread flour
  • pinch of salt
The filling:
  • 250 gr sugar
  • 35 gr (1 package) ground cinnamon
  • 110 gr butter, softened (room temperature)
The cream cheese frosting (glaze):
  • 150 gr cream cheese, softened
  • 50 gr butter, softened
  • 300 gr sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons of rum or cognac (optional)
  • 100 gr heavy cream (35%)
Ingredients :
  • Preheat oven to 180°
  • Mix dough dry ingredients together
  • Whisk eggs and sugar add butter
  • Knead the dough let it rise in a warm place (covered with a clean towel) if the dough is too sticky add more flour
  • Roll out the dough into rectangle
  • Spread softened butter add cinnamon +sugar
  • Tightly roll dough up and place seam side down
  • Cut into even rolls with a knife
  • Place cinnamon rolls in a greased cake pan. (I also recommend lining the pan with parchment paper ).Cover with a towel and let rise again for 30-45 minutes.
  • Bake for 20-25 minutes (until just slightly golden brown )
  • In a bowl of an electric mixer beat heavy cream +sugar until stiff peaks add cream cheese and the rest of the ingredients (except alcohol) beat until smooth
  • Add rum or cognac gently fold it in
