Bird's milk cake



For the cake:
  • 50 gr unsalted butter (soft : room temperature)
  • 1 egg
  • 50 gr sugar
  • 70 gr flour
Souffle
  • 60 gr butter (room temperature)
  • 50 gr condensed milk (room temperature)
  • 2 egg whites
Syrup
  • 70 gr cold water
  • 7 gr agar-agar (vegan type of gelatine)
  • 165 gr sugar
Ingredients :
Preheat oven to 210-220C
1. Mix butter, sugar and a pinch of salt , then add egg, mix throughly , split the dough into 2 round parts , bake until light golden brown color on the borders
2.Souffle :
Mix butter and condensed milk until white color
In another bowl mix egg whites + pinch of salt + a teaspoon of lemon juice mix until dense structure
3 Syrup:
add water + agar -agar , boil the mixture, then add sugar and very quickly mix, take it off and let it cool down
3. Add syrup to the egg whites mixture , mix very well together on a medium speed, then add butter with condensed milk
